Using specialized distiller’s yeast, the mash undergoes a 60–70 hour fermentation cycle. Every stage is digitally monitored in a sterile environment to ensure a high-purity foundation for distillation.

While grain is often easier to process at scale, potatoes require specialized handling during mashing and fermentation to unlock their characteristic mouthfeel. This extra effort is what creates the value.
